The pursuit of the world’s finest gelato…

If you said that we love good food, you would be right. If you are here, perhaps you Share a love of really good foods.

We would argue good food goes beyond the momentary experience on the palate. To our way of thinking, The best foods are a concert of skilled farming, Minimal processing, Intentional sourcing, refined technique and Excellent handling, combined with graceful and seemingly effortless Service in a welcoming. clean and relaxed space. Good Food is about an experience.

with the intent of being Kind and thoughtful to People, Animals and our planet, we have pursued the best ingredients (meaning they are ethically and well-made), have tried to offer Industry Leading pay , and have tried to put the price of our product within reach of most people.

If you would call this pursuit “challenging”, then I would say multiply that sentiment by 100 times.

It takes grit, resilience, patience, passion, Pursuit, Kindness, Agility, Sleepless nights, Holidays, Birthdays, Reading, Research, Creativity, Constant Communication, and literal Blood, Sweat, and tears, along with a myriad of other qualities to do just Something simple right. (This and we’re only open a few days each week.)

Good food and Service shouldn’t be this hard. We are tough people, but really, it shouldn’t be this hard. Alas…good food is hard to do well.

So, we are seeking new avenues to keep our prices near the same as the not-so-well made Gelato prices. This, when all of our ingredients are at least double the cost, and some are 10x the cost of conventional gelato ingredients. (And yes, we won’t do it the other way on principal)

Among the ideas: sell more/Profit Less. This is Hard to do with a 250sf kitchen. So, we are reinvesting. It’s another unknown: A cliff dive, if you will, like falling into an unknown abyss. At least when we opened, we could say we made our dream a reality. This time, it’s scarier than opening, as this time, it’s about survival… just believing and holding on to doing something right in this world, even if it’s just gelato.
